Green and Pink Salad

This is a very fresh and spicy salad. Why not give it a try.

Preparation time: 75 minutes

Serves: 5

Energy: 324 calories

Ingredients:

– 1 sweet Italian red onion

– ½ cup Valdosta pecans

– 1 medium head lettuce

– 10 tbsps parmesan cheese

– 1 dash black pepper

– 1 tbsp salt

– 5 tsps vinegar

– 5 tbsp olive oil

– 1 ½ cups cubed avocado

– 1 ½ cups pared, chopped cucumber

– 1 clove garlic

Method:

1)      Wash and dry the lettuce

2)      Cut the red onion in fine slices out them in a bowl with the lime juice, salt it, reserve covered in the fridge for one hour or when you see the lime juice turn pink.

3)      In a bowl combine the lettuce, avocado, cucumber (cut in half moons retiring the seeds part), salt and pepper it.

4)      Before serving add the olive oil and parmesan cheese. Make a puree with the garlic and add it in, the vinegar and the red onions (without the lime juice). Mix it all well and finally cover it up with the Valdosta pecans.
