Vegetable Soup with lentils and Barley

A delicious and filling vegetable soup.

Preparation: 38 minutes
Serves: 6
Energy: 164 calories per serving

– 1 cup sliced onions
– 3 cups chopped cabbage
– 1 tbsp pepper
– 1 tbsp salt
– 3 cups okra
– 2 cups chopped zucchini
– 10 cups water
– ¾ cup lentils
– 1/3 cup barley

1) Place water in a large pot and add onions. Cover to boil.
2) Add lentils and barley to boil for 10 minutes.
3) Add all the other vegetables to the boiling water. Boil on a high for another 5-10 minutes (time varies depending on how crisp you like your vegetables).
4) Turn off the stove and add salt and pepper to taste and enjoy.
